Vegan Jambalaya

Instant Pot Vegan Jambalaya

35–40 minutes


Ingredients

  • 1 onion, chopped
  • 1–2 celery stalks, chopped
  • 1 green or red bell pepper, chopped
  • 2 Field Roast vegan sausages, sliced (optional)
  • 1 can (15 oz) kidney beans, drained and rinsed
  • Optional: 1 can (15 oz) white beans, drained and rinsed (if omitting the sausage for extra protein)
  • 1 can (14.5 oz) petite diced tomatoes
  • 1 tablespoon Cajun seasoning
  • 1 cup brown rice, rinsed
  • 2½ cups vegetable broth

Optional Add-Ins

  • Okra
  • Mushrooms
  • Zucchini
  • Additional bell peppers

Instructions

1. Add ingredients to the Instant Pot

Place the following into the Instant Pot:

  • Onion
  • Celery
  • Green pepper
  • Vegan sausage (if using)
  • Kidney beans
  • White beans (if using)
  • Petite diced tomatoes
  • Cajun seasoning
  • Brown rice
  • Vegetable broth

Stir everything together.


2. Pressure cook

Seal the lid and cook using the Brown Rice setting (about 22 minutes on High Pressure).

Allow the pressure to release naturally for 10 minutes, then carefully release any remaining pressure.


3. Fluff and serve

Stir the jambalaya and fluff the rice with a fork.

Serve warm.


Tips

  • For a heartier meal, use both vegan sausage and white beans.
  • Adjust the Cajun seasoning to make it milder or spicier.
  • Garnish with sliced green onions or fresh parsley for extra flavor.
  • This recipe is excellent for meal prep and tastes even better the next day.
