Ingredients
- 1 block firm tofu
- 1 scoop vanilla protein powder
- 1 teaspoon vanilla extract
- ¼ cup maple syrup
- ¼ cup soy milk
- 3–4 probiotic capsules (optional)
- 1 teaspoon lemon juice or juice from ½ lemon
- Optional: ¼ cup cashews
For Serving
- Fresh berries
- Granola
Instructions
- Add tofu, protein powder, vanilla, maple syrup, and soy milk to a blender.
- Add probiotic capsules if desired.
- Add lemon juice for a yogurt-like tang.
- Optional: add cashews for extra creaminess.
- Blend until completely smooth and creamy.
- Refrigerate before serving. The texture improves as it chills.
- Serve with berries and granola.
Notes
- For a thicker Greek yogurt-style texture, omit the soy milk.
- If not using protein powder, add a little extra maple syrup for sweetness.
- The flavor develops and improves after sitting in the refrigerator.
