Tofu Yogurt

Ingredients

  • 1 block firm tofu
  • 1 scoop vanilla protein powder
  • 1 teaspoon vanilla extract
  • ¼ cup maple syrup
  • ¼ cup soy milk
  • 3–4 probiotic capsules (optional)
  • 1 teaspoon lemon juice or juice from ½ lemon
  • Optional: ¼ cup cashews

For Serving

  • Fresh berries
  • Granola

Instructions

  1. Add tofu, protein powder, vanilla, maple syrup, and soy milk to a blender.
  2. Add probiotic capsules if desired.
  3. Add lemon juice for a yogurt-like tang.
  4. Optional: add cashews for extra creaminess.
  5. Blend until completely smooth and creamy.
  6. Refrigerate before serving. The texture improves as it chills.
  7. Serve with berries and granola.

Notes

  • For a thicker Greek yogurt-style texture, omit the soy milk.
  • If not using protein powder, add a little extra maple syrup for sweetness.
  • The flavor develops and improves after sitting in the refrigerator.
