Swamp Soup

Swamp Soup

6–8 servings

Total Time

15 mins or 1 hour if you cook the chickpeas from scratch. 

TIP: this soup tastes better if you can use a chick'n broth instead of veggie broth. (I like using the no chicken bullion paste) That will make it so that the soup is a little more green and less brown. I also love using fresh ginger if you have it. 

 


Ingredients

Chickpeas (from dry)

  • 2½ cups dried chickpeas, rinsed
  • Water (3x the amount of chickpeas)
  • 1 tablespoon salt
  • Optional: ½–1 teaspoon baking soda (for easier digestion)

Shortcut: Use 3–4 cans chickpeas, drained and rinsed


Base Sauce

  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 inches fresh ginger (or 1 teaspoon ground ginger)
  • 1 bell pepper, chopped
  • 4 teaspoons vegetable bouillon
  • 1 bag (6 oz) fresh spinach
  • Soy sauce, to taste
  • Zest and juice of 1 lime

Optional

  • ¼-1/2 can coconut milk (for creaminess, optional)
  • 1 jalapeño (for spice)

For Serving

  • Cooked rice
  • Fresh cilantro or green onions

Instructions

1. Cook chickpeas (Instant Pot)

Add chickpeas, water (3x volume), and salt to the Instant Pot.

Cook on high pressure for 40 minutes, then allow a natural release for 20 minutes.

Drain and rinse well. Set aside.


2. Cook rice

Prepare rice according to package instructions. Set aside.


3. Sauté vegetables

In a large pot, water sauté onion for 3–4 minutes.

Add garlic and ginger and cook another 1–2 minutes.

Stir in bell pepper (and jalapeño if using) and cook for a few minutes until slightly softened.


4. Add seasoning and spinach

Add vegetable bouillon and spinach.

Cook just until spinach wilts—do not overcook.


5. Blend the sauce

Transfer mixture to a blender and blend until smooth.

Pour the sauce back into the pot.


6. Finish the sauce

Heat gently and add:

  • Soy sauce to taste
  • Lime zest and juice

Optional: stir in coconut milk for a creamier version.


7. Assemble

Add chickpeas and stir to coat in the sauce.

Serve over rice (use as much or as little as you like).


8. Garnish

Top with cilantro or green onions and enjoy!


Notes

  • Don’t add too much rice—it can dilute the flavor
  • Great for meal prep and reheats well
  • You can fully customize spice level
