Roasted Red Pepper Dip

Roasted Red Pepper Dip 

Servings

6–8 servings

Ingredients

  • 1 cup walnuts
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 jar (12–16 oz) roasted red peppers (with juices)
  • 3 cloves garlic
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ cup nutritional yeast

Instructions

  1. Blend walnuts first
    Add walnuts to a food processor and process until finely ground.
  2. Add remaining ingredients
    Add chickpeas, garlic, roasted red peppers (including juices), smoked paprika, and salt.
  3. Blend until smooth
    Process until mostly smooth, scraping down the sides as needed.
  4. Add nutritional yeast
    Add nutritional yeast and blend again until creamy and well combined.
  5. Serve
    Serve as a dip with veggies, crackers, or spread on wraps and sandwiches.

Tips

  • Add a splash of water if you want a thinner consistency
  • For extra brightness, add a squeeze of lemon juice
  • Great for meal prep—it keeps well in the fridge
