🌮 Quick High-Protein Vegan Tacos
Serves: 4–6 | Time: 5–10 minutes

📝 Ingredients:

1/2 cup TVP (textured vegetable protein)

1 cup water
-
1 packet taco seasoning (or about 2–3 tablespoons)

1 can black beans, drained and rinsed

1 can petite diced tomatoes (with liquid)
🥣 Instructions:

In a medium saucepan, combine TVP, water, taco seasoning, black beans, and diced tomatoes (with liquid).

Stir well and bring to a simmer over medium heat.

Cook uncovered for about 5–7 minutes, or until the liquid is absorbed and the mixture thickens.

Remove from heat and spoon the filling into your favorite tortillas.
🌱 Optional Toppings:

Chopped lettuce or spinach

Sliced avocado or guacamole

Salsa or pico de gallo

Vegan sour cream or plain unsweetened plant-based yogurt
