Sheet Pan Potatoes, Chickpeas & Roasted Vegetables

Ingredients

1 bag frozen broccoli and cauliflower roasting mix

2 cans chickpeas, drained and rinsed

1 bag mini potatoes
-
1 red onion, chopped
-
1 teaspoon garlic powder
-
Salt and pepper to taste

Optional: favorite dressing or sauce for serving
Instructions

Preheat oven
Preheat oven to 350°F. -
Prepare sheet pan
Spread broccoli, cauliflower, chickpeas, and mini potatoes evenly across a large sheet pan. -
Add onion and seasoning
Sprinkle chopped red onion over the top. Season with garlic powder, salt, pepper, and any other desired spices. -
Roast
Bake for 45 minutes, stirring once halfway through for even roasting. -
Serve
Drizzle with your favorite dressing or sauce if desired and serve warm.
