Sheet Pan Potatoes, Chickpeas & Roasted Vegetables

Ingredients

  • 1 bag frozen broccoli and cauliflower roasting mix

  • 2 cans chickpeas, drained and rinsed

  • 1 bag mini potatoes

  • 1 red onion, chopped

  • 1 teaspoon garlic powder

  • Salt and pepper to taste

  • Optional: favorite dressing or sauce for serving


Instructions

  1. Preheat oven
    Preheat oven to 350°F.

  2. Prepare sheet pan
    Spread broccoli, cauliflower, chickpeas, and mini potatoes evenly across a large sheet pan.

  3. Add onion and seasoning
    Sprinkle chopped red onion over the top. Season with garlic powder, salt, pepper, and any other desired spices.

  4. Roast
    Bake for 45 minutes, stirring once halfway through for even roasting.

  5. Serve
    Drizzle with your favorite dressing or sauce if desired and serve warm.
