Sun-Dried Tomato Pesto Pasta with Tofu Ricotta (Sheet Pan)

Ingredients

12 oz pasta of choice
-
1 block extra-firm tofu
-
5 oz hummus
-
½ cup nutritional yeast
-
1 tablespoon Italian seasoning
-
1 teaspoon salt
-
½ cup pesto (vegan if needed)
-
1 package sun-dried tomatoes, chopped
-
2 cups chopped kale
-
Fresh basil (optional)
-
Garlic powder (optional)
Instructions

Cook pasta
Cook pasta according to package instructions. Drain and set aside. -
Make tofu ricotta
In a bowl crumble tofu and mix with hummus, nutritional yeast, Italian seasoning, and salt. -
Mix pasta and sauce
Toss cooked pasta with pesto, then fold in the tofu ricotta mixture. -
Add sheet pan ingredients
Spread pasta mixture onto a large sheet pan. Top with sun-dried tomatoes and chopped kale. -
Bake
Bake at 350°F for 20 minutes until heated through. -
Serve
Garnish with fresh basil and a sprinkle of garlic powder if desired.
