Sun-Dried Tomato Pesto Pasta with Tofu Ricotta (Sheet Pan)

Ingredients

  • 12 oz pasta of choice

  • 1 block extra-firm tofu

  • 5 oz hummus

  • ½ cup nutritional yeast

  • 1 tablespoon Italian seasoning

  • 1 teaspoon salt

  • ½ cup pesto (vegan if needed)

  • 1 package sun-dried tomatoes, chopped

  • 2 cups chopped kale

  • Fresh basil (optional)

  • Garlic powder (optional)


Instructions

  1. Cook pasta
    Cook pasta according to package instructions. Drain and set aside.

  2. Make tofu ricotta
    In a bowl crumble tofu and mix with hummus, nutritional yeast, Italian seasoning, and salt.

  3. Mix pasta and sauce
    Toss cooked pasta with pesto, then fold in the tofu ricotta mixture.

  4. Add sheet pan ingredients
    Spread pasta mixture onto a large sheet pan. Top with sun-dried tomatoes and chopped kale.

  5. Bake
    Bake at 350°F for 20 minutes until heated through.

  6. Serve
    Garnish with fresh basil and a sprinkle of garlic powder if desired.
