Navy Bean Spinach and Artichoke Dip

Navy Bean Spinach Artichoke Dip

Ingredients

Creamy Base

  • 1 can (15 oz) navy beans, rinsed and drained
  • ½ cup unsweetened, unflavored plant-based milk
  • ¼ cup nutritional yeast
  • ¼ cup raw cashews
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • Sprinkle of black pepper

Vegetables

  • 10–12 oz artichoke hearts, drained (reserve any oil or liquid if packed in oil)
  • 2 cups fresh spinach

Optional Topping

  • Additional nutritional yeast for sprinkling before baking

Instructions

1. Make the creamy sauce

Add the following ingredients to a high-powered blender:

  • Navy beans
  • Plant-based milk
  • Nutritional yeast
  • Cashews
  • Lemon juice
  • Dijon mustard
  • Garlic powder
  • Onion powder
  • Smoked paprika
  • Salt
  • Black pepper

Blend until completely smooth and creamy.


2. Cook the vegetables

Add the artichoke hearts to a large skillet over medium heat.

(If using oil-packed artichokes, try to leave most of the oil behind when adding them to the pan.)

Add the spinach and cook until wilted.

Using a spoon or potato masher, gently mash the artichoke hearts into bite-sized pieces while mixing them with the spinach.


3. Combine

Pour the creamy navy bean sauce into the skillet.

Reduce the heat to low and stir until everything is well combined and heated through.


4. Optional baked version

Transfer the dip to a baking dish.

Sprinkle the top with additional nutritional yeast.

Bake at 375°F for 15–20 minutes, or until hot and lightly golden around the edges.


5. Serve

Serve warm with:

  • Tortilla chips
  • Pita chips
  • Crackers
  • Toasted bread
  • Fresh vegetables

Tips

  • Baking the dip creates a delicious golden top.
  • Frozen spinach can be substituted—just thaw and squeeze out the excess water first.
  • Add a pinch of crushed red pepper flakes for a little heat.
  • Leftovers make an excellent sandwich or wrap spread.
