Lazy Peanut Butter Energy Bites

Ingredients

  • 1 cup old-fashioned oats
  • 2/3 cup toasted shredded coconut, sweetened or unsweetened
  • 1/2 cup creamy peanut butter
  • 1/2 cup ground flaxseed
  • 1/2 cup semisweet or vegan chocolate chips
  • 1/3 cup maple syrup
  • 1/3  cup chia seeds

Instructions

  1. Add all ingredients to a large bowl and stir until well combined.
  2. Refrigerate the mixture for 20–30 minutes so it firms up and is easier to roll.
  3. Scoop out about 1 tablespoon at a time and roll into balls.
  4. Store in an airtight container in the refrigerator for up to 1 week.

Tip: If the mixture feels too sticky or soft, add another tablespoon or two of oats or ground flaxseed. If it feels too dry, add a little extra peanut butter or maple syrup.
