Korean BBQ Tofu Sheet Pan Meal

Ingredients
- 1 block super firm tofu
- 1 bottle of Korean BBQ sauce
- Vegetables of your choice (I used potatoes and squash 2-3 cups of each)
- Seasoning of choice (seasoned salt works well)
Instructions
1. Preheat the oven
Preheat oven to 425°F.
2. Prepare the tofu
Cut the super firm tofu into larger bite-sized chunks.
Place the tofu in a bowl and pour Korean BBQ sauce over the top. Toss until every piece is well coated.
Let the tofu sit and marinate while you prepare the vegetables.
3. Prepare the vegetables
Chop the potatoes, squash, and any other vegetables you're using into similar-sized pieces.
Season the vegetables with your favorite seasonings. Seasoned salt works especially well with this recipe.
4. Assemble the sheet pan
Spread the tofu and vegetables evenly across a large baking sheet.
Try to keep everything in a single layer so the vegetables roast and the tofu gets nicely browned.
5. Bake
Bake at 425°F for about 30 minutes, or until the vegetables are tender and the tofu is browned around the edges.
6. Serve
Serve immediately with extra Korean BBQ sauce drizzled over the top if desired.
This is delicious served over rice for a complete meal.
Tips
- Super firm tofu works best because it doesn't require pressing.
- Cut the tofu into larger chunks so it stays hearty and satisfying.
- Use whatever vegetables you have on hand. Broccoli, bell peppers, onions, carrots, squash, and potatoes all work well.
- For extra crispy tofu, spread the pieces out so they aren't touching.
- Add a sprinkle of green onions or sesame seeds before serving.
