High-Protein Navy Bean Cookie Dough

Looking for a healthier cookie dough that actually keeps you full? This high-protein version is made with navy beans and textured vegetable protein (TVP) instead of protein powder, giving you a creamy, delicious treat that's packed with plant-based protein and fiber.

Why I Use TVP

To boost the protein without changing the flavor, I use TVP (textured vegetable protein). Before adding it to the recipe, simply blend the dry TVP into a fine flour using a blender or food processor.

I love using TVP because it's inexpensive, shelf-stable, and made from just one ingredient: soy.

Don't have TVP? No problem! Here are a few easy substitutions:

  • Unflavored protein powder – Highest protein option.

  • Almond flour – Adds a rich, nutty flavor and more healthy fats.

  • Oat flour – A great whole-grain option with a slightly heartier texture.

Each version is delicious, so use whatever you have on hand!

Ingredients

  • 1 (15-ounce) can navy beans, drained and rinsed well

  • ¼ cup natural peanut butter

  • ¼ cup pure maple syrup

  • ¼ cup TVP, blended into a fine flour

  • 1 teaspoon vanilla extract

  • ½ teaspoon ground cinnamon

  • ¼ teaspoon fine sea salt

  • 1–2 teaspoons unsweetened soy milk, or more as needed to blend

  • ¼ cup chocolate chips (or measure with your heart)

Optional Add-Ins

  • 1 tablespoon ground flaxseed for extra fiber

  • ½ teaspoon almond extract for a bakery-style cookie dough flavor

  • 2 tablespoons quick oats for extra texture

  • Extra chocolate chips for serving

Instructions

  1. Place the dry TVP into a blender or food processor and blend until it becomes a fine flour.

  2. Add the navy beans, peanut butter, maple syrup, TVP flour, vanilla, cinnamon, salt, and soy milk to a blender or food processor.

  3. Blend until completely smooth, scraping down the sides as needed. If the mixture is too thick, add another splash of soy milk, one teaspoon at a time.

  4. Fold in the mini chocolate chips.

  5. Refrigerate for 30 minutes before serving for the best cookie dough texture.

Enjoy with apple slices, strawberries, graham crackers, pretzels, or simply by the spoonful!

Storage

Store in an airtight container in the refrigerator for up to 5 days.
