Easy Korean BBQ Tofu

Easy Korean BBQ Tofu

Servings

4 servings

45 minutes


Ingredients

Tofu

  • 1 block super firm tofu
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons cornstarch
  • 2–4 tablespoons Korean BBQ sauce

Vegetables

  • 1 bag frozen sheet pan vegetables
  • (Such as the Organic Sheet Pan Vegetables from Costco)

For Serving

  • Cooked rice
  • Chives, sliced

Alternative

  • Chickpeas instead of tofu

Instructions

1. Prepare the rice

Cook rice according to package instructions.


2. Roast the vegetables

Spread vegetables on a baking sheet.

Bake at 450°F for 30 minutes.


3. Prepare the tofu

Cut tofu into small cubes.

Place tofu in a container with a lid.

Add salt and pepper. Shake to coat.

Add cornstarch and shake again until evenly coated.


4. Air fry

Air fry at 450°F for 10 minutes.

Flip and cook another 10 minutes until crispy.


5. Add the sauce

Transfer tofu to a bowl and drizzle with Korean BBQ sauce.

Toss until coated.


6. Assemble bowls

Add rice to bowls.

Top with roasted vegetables and Korean BBQ tofu.

Garnish with sliced chives.


Alternative Chickpea Version

Replace tofu with:

  • 2 cans chickpeas, rinsed and drained

Drizzle chickpeas with Korean BBQ sauce and serve over rice with vegetables.
