Creamy Beans, Spinach and Peas
Servings

4–6 servings

Total Time

25 minutes

Ingredients

  • 1 onion, chopped

  • 3 cloves garlic, minced

  • ½ thumb-sized piece fresh ginger, minced

  • 1 cup vegetable broth

  • 1 teaspoon vegetable bouillon

  • 10 oz frozen green peas

  • ¼ cup nutritional yeast

  • 1 can (15 oz) white beans, rinsed and drained

  • ½ cup unsweetened plant-based milk

  • 1 tablespoon flour

  • 1 tablespoon miso paste

  • 2 cups fresh spinach

  • Juice of ½ lemon

  • Salt and black pepper, to taste

For Serving

  • Toasted sourdough bread

  • Cooked rice (optional)

Instructions

1. Sauté the aromatics

In a large skillet, water-sauté the chopped onion, garlic, and ginger until softened and fragrant.

Add a splash of water as needed to prevent sticking.

2. Add the peas and creamy ingredients

Add the vegetable broth, vegetable bouillon, green peas, nutritional yeast, white beans, and plant-based milk.

Stir everything together.

3. Make the slurry

Remove about half of the liquid mixture from the skillet and place it in a separate bowl or measuring cup.

Whisk in the flour until smooth, creating a slurry.

Pour the slurry back into the skillet and stir to combine.

4. Simmer until creamy

Reduce the heat to low and cook, stirring occasionally, until the mixture thickens.

Stir in the miso paste until dissolved.

5. Add the spinach

Fold in the fresh spinach and cook until wilted.

Add the lemon juice and season with salt and black pepper to taste.

6. Serve

Spoon the creamy pea and spinach mixture over toasted sourdough bread.

You can also serve it over rice for a hearty meal.

Tips

  • Blend a portion of the white beans with the plant milk if you'd like an even creamier consistency.

  • Add extra vegetable broth if the mixture becomes too thick.

  • Stir the miso paste in toward the end of cooking to preserve its flavor.

  • Add mushrooms or extra vegetables for more variety.

  • This makes a delicious topping for baked potatoes, too.

Why You'll Love This Recipe

  • Creamy without dairy or heavy cream

  • Uses affordable pantry staples

  • Packed with fiber and plant protein

  • A delicious way to enjoy leafy greens

  • Versatile enough to serve over toast, rice, or potatoes
