Cauliflower Black Bean Tacos

 


Cauliflower Black Bean Tacos
Serves: 8 Total Time:  20 minutes  FODMAP Rating: High

Ingredients
1 head of cauliflower 
1/2 cup water
1 teaspoon minced garlic
3 tablespoons taco seasoning
3 tablespoons maple syrup or honey
1 can black beans, rinsed and drained

optional toppings
bell peppers
vegan sour cream 
green onions


cashew cream
2 cups raw cashews 
1 cup water

Instructions
1. Chop cauliflower into bite sized pieces.
2. In a small bowl add the water, minced garlic, taco seasoning and maple syrup or honey.
3. Place the cauliflower and black beans to a pan. Add the bowl of seasoning and let cook for 5 minutes. 
4. While everything is cooking make the cashew cream by adding the cashews and water to a high speed blender and mix until creamy. 
5. Assemble the tacos by adding the cooked cauliflower, black beans and top with cashew cream and favorite taco toppings.
