Sheet Pan Bean Burritos

Ingredients

  • 8–10 tortillas (any kind)

  • 2 cans black beans, drained and rinsed

  • 2 cups fresh spinach

  • 1 cup mushrooms, chopped

  • 1 bell pepper, chopped

  • 1–1½ cups salsa or enchilada sauce

  • Optional: vegan shredded cheese

  • Non-stick spray


Instructions

  1. Preheat oven
    Preheat oven to 350°F.

  2. Layer tortillas
    Place tortillas on a large sheet pan, overlapping slightly to form a base layer.

  3. Add fillings
    Spread spinach, mushrooms, peppers, and black beans evenly over the tortillas.

  4. Add sauce or cheese
    Drizzle salsa or enchilada sauce over the top. Sprinkle vegan cheese if using.

  5. Fold tortillas
    Place one tortilla in the center and fold the surrounding tortillas over the top to enclose the filling.

  6. Bake
    Lightly spray the top with non-stick spray. Place a second sheet pan on top to press the burritos slightly.

    Bake 25–30 minutes.

  7. Optional broil
    Remove top pan and broil for 2–3 minutes to crisp the top.

  8. Serve
    Cut into squares and enjoy.
