Sheet Pan Bean Burritos

Ingredients

8–10 tortillas (any kind)

2 cans black beans, drained and rinsed

2 cups fresh spinach
-
1 cup mushrooms, chopped
-
1 bell pepper, chopped
-
1–1½ cups salsa or enchilada sauce
-
Optional: vegan shredded cheese
-
Non-stick spray
Instructions

Preheat oven
Preheat oven to 350°F. -
Layer tortillas
Place tortillas on a large sheet pan, overlapping slightly to form a base layer. -
Add fillings
Spread spinach, mushrooms, peppers, and black beans evenly over the tortillas. -
Add sauce or cheese
Drizzle salsa or enchilada sauce over the top. Sprinkle vegan cheese if using. -
Fold tortillas
Place one tortilla in the center and fold the surrounding tortillas over the top to enclose the filling. -
Bake
Lightly spray the top with non-stick spray. Place a second sheet pan on top to press the burritos slightly.Bake 25–30 minutes.

Optional broil
Remove top pan and broil for 2–3 minutes to crisp the top. -
Serve
Cut into squares and enjoy.
