Burrito Bowls (Easy Crowd-Friendly Meal)

Ingredients

Base

  • Cooked rice
  • Romaine lettuce

Beans

  • Black beans
  • Pinto beans
  • Seasoning of choice (taco seasoning, cumin, garlic powder)

Roasted Sweet Potatoes

  • 2–3 sweet potatoes, cubed

Fresh & Toppings

  • Fresh mango, diced
  • Pickled onions
  • Salsa
  • Avocado or guacamole
  • Grilled peppers and onions
  • Fresh cilantro
  • Ranch dressing (vegan if needed)
  • Tortilla chips

Optional

  • Tortilla Land ready-to-cook tortillas

Instructions

1. Prep components

Cook rice and beans. Season beans after cooking.


2. Roast sweet potatoes

Bake at 400°F for 25–30 minutes until tender.


3. Cook peppers & onions

Sauté until soft and slightly charred.
