Ingredients
Base
- Cooked rice
- Romaine lettuce
Beans
- Black beans
- Pinto beans
- Seasoning of choice (taco seasoning, cumin, garlic powder)
Roasted Sweet Potatoes
- 2–3 sweet potatoes, cubed
Fresh & Toppings
- Fresh mango, diced
- Pickled onions
- Salsa
- Avocado or guacamole
- Grilled peppers and onions
- Fresh cilantro
- Ranch dressing (vegan if needed)
- Tortilla chips
Optional

Instructions
1. Prep components
Cook rice and beans. Season beans after cooking.
2. Roast sweet potatoes
Bake at 400°F for 25–30 minutes until tender.
3. Cook peppers & onions
Sauté until soft and slightly charred.
4. Prep toppings
Chop mango, lettuce, and any fresh toppings.
5. Set up a bowl bar
Arrange everything buffet-style:
- Rice
- Beans
- Sweet potatoes
- Veggies
- Toppings and sauces
6. Serve
Let everyone build their own bowl.
