Vegan Oatmeal Smoothie Bowl

This quick breakfast is the perfect mix between drinking a smoothie and eating oatmeal. It is very versatile, and you can even swap your favorite green smoothie instead of our simple one below. Feel free to add more greens, plant milk or sweetener to get the perfect blend to your tastes. This is also a great pre-workout meal because the greens help to open your arteries and allow more blood flow, and the oats help sustain energy through longer intervals of high intensity. (This is my go-to pre half marathon breakfast )

INGREDIENTS
⅓ cup of whole rolled oats, gluten-free variety if needed
¼ cup water
a handful of spinach, start with a few leaves and add to taste
⅓ cup of sweetened plant milk (if unsweetened you may want to add some maple syrup)
½ tsp cinnamon
handful of frozen blueberries
fresh fruit of choice (mangos, bananas, strawberries, etc)
1 tsp of hemp/chia/or flax
1 tsp of pepitas or sunflower seeds
1 tsp nut or seed butter
coconut flakes to garnish


INSTRUCTIONS
Pour oatmeal into a microwave safe bowl. Add water and microwave for 1 minute.
Blend plant milk and spinach and cinnamon in a blender until smooth
Pour spinach mixture over the cooked oatmeal (but don’t mix)
Add frozen blueberries and fresh fruit of choice, sprinkle with hemp/chia/or flax, pepitas, and coconut flakes. Drizzle nut or seed butter over bowl
