Vegan Quick Bread

 Vegan Quick Bread

Serves 6-8 | Total Time: 1 Hour | FODMAP Rating: Low

This recipe is perfect when you’re short on time. Similar to banana bread, there’s no need for yeast or waiting for the dough to rise—baking powder does the job! We’ve swapped half the oil for applesauce to lighten it up, but we kept a touch of vegan butter to balance the sweetness and achieve the perfect texture. Simple, quick, and delicious, this bread comes together in no time!

Ingredients:

  • 3 cups all-purpose flour
  • 3 tsp baking powder (aluminum-free)
  • 1 tsp salt
  • 4 tbsp unsalted butter, melted
  • 4 tbsp applesauce
  • 1 1/4 cups plant-based milk

Instructions:

  • Preheat your oven to 350°F (175°C) and lightly grease a loaf pan or line it with parchment paper.
  • In a mixing bowl, whisk together the flour, baking powder, and salt.
  • In a separate bowl, combine the melted butter and applesauce, then stir in the plant-based milk.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  • Pour the batter into the prepared loaf pan and spread it evenly.
  • Bake for 40–50 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
