Cookie Dough Vegan Protein Bars

Cookie Dough Vegan Protein Bars 
Makes: 20 bars • Total Time: 20 mins â€˘ FODMAP rating: low

Instead of paying for expensive vegan protein bars, you can easily make your own. And they taste way better!  I like to use unflavored protein so you don't get a weird stevia aftertaste My favorite protein powder is Complement's unflavored vegan protein powder. (use code PLANTWHYS10 to save 10%). But this recipe was made for your basic vegan protein powder so if you use the unflavored version you may want to add a little more sweetener. My favorite brand of peanut butter is Crazy Richards (it is cheap and healthy). And you can make your own oat flour by blending oats in a high speed blender. 

Ingredients
1/2 cup oat flour
1 1/2 cup vegan protein powder
2 cups peanut butter (or a 16 oz jar)
1/2 cup maple syrup (or more to taste if you are using unflavored protein powder)
1 can chickpeas blended with a 1/2 cup of water until.
1/2 cup mini chocolate chips

Instructions
1.Blend the can of rinsed a drained chickpeas with 1/2 cup of water in your blender until it becomes a paste.  Mix the dry ingredients together in a food processor, then add the peanut butter, maple syrup, and blended chickpeas.
2.Mix well. You may need to start and stop the food processor a few times to push everything down. Taste to see if you want to add more sweetener (especially if you used unflavored protein powder) then add in the chocolate chips and mix well. (If the dough is warm from so much processing, you might want to place the dough in the freezer for a couple of minutes before adding the chocolate chips so they don't melt.)

There are a couple of ways to turn these into bars. You can use silicone molds, or you can place plastic wrap, wax paper or parchment paper at the bottom of a 9x13 inch pan and then press the dough into it. Then refrigerate for 30 mins (or use the freezer for 15 mins) and take the mixture out of the pan then cut into bars.

Store in the fridge for 1 week or freezer for 3 months in an airtight container. 

 

*depending on your protein powder you may need to experiment a little with the consistency. It is ok to add a little bit more water until you get the consistency of play dough for the bars.
