Vegan Fried Rice

Vegan Fried Rice
Serves: 6 • Total Time: 20 minutes • FODMAP Rating: low

Loaded with colorful veggies and protein-packed tofu, it's a super easy and healthy meal. Experience the same satisfaction without compromising your health—this vegan version is lower in cholesterol, saturated fats and calories, than traditional friend rice, but tastes just as go.

Ingredients
1 package tofu
1/4 teaspoon turmeric
2 tablespoons nutritional yeast
1/2 teaspoon salt
dash of black pepper
1 onion
4 cloves garlic
14 oz bag of frozen veggies (peas, corn, carrots, green beans)
4 cups cooked and cooled rice
4-5 tablespoons of soy sauce (or more for taste)
garnish with green onions

Instructions
1. In a large skillet, crumble tofu and add the turmeric, nutritional yeast, salt and pepper. Once everything is mixed and warmed through, remove the tofu scramble from the skillet. Then chop and water sauté the onion over medium-high heat.
2. Add garlic and sauté for about 1 minute.
3. Add veggies, rice and soy sauce and mix thoroughly. Once everything is warmed through, add back the tofu scramble and remove from heat then garnish with green onions. 

*FODMAP Swaps: Omit the garlic and white onion or start with ½ teaspoon per serving and increase as tolerated.
