Vegan Dirt Cups

Vegan Dirt Cups
Makes 4 large cups Total Time: 15 minutes (plus 1 hour chill time) • FODMAP rating: medium

Dirt Cups are not only a very fun and cute spring treat, but one of the most rich chocolate desserts you could make! This dessert is high in protein, fat, calcium, iron, magnesium, and vitamin E. Young children will greatly enjoy assembling this treat.

Ingredients
1 (12 or 16 oz) package silken tofu*
1 cup dairy-free chocolate chips
1 teaspoon pure vanilla
¼ cup peanut butter, optional

Dirt
½ cup dates, pitted
½ cup nuts or seeds of choice
2 tablespoons ground flax seeds
1 tablespoons unsweetened cocoa powder
â…› teaspoon salt
½ teaspoon pure vanilla

sliced strawberries* and cups or jars for serving

Instructions
Melt the chocolate chips in a bowl in the microwave for 1-2 minutes, until smooth when stirred.
Empty the package of silken tofu into a blender.
Add the melted chocolate chips, peanut butter (if using) and vanilla and then blend until smooth.
Divide the pudding into cups or little jars and put in the fridge for at least 1 hour to set up.
In a food processor, blend the dates until sticky.
Add the almonds, flax seed, cocoa, salt, and vanilla and process until crumbly.
Sprinkle the dirt onto the pudding.
Add a strawberry on top and enjoy eating dirt!


*Don’t forget to preload on vegetables before you eat!
*If available, use Mori-Nu silken firm tofu that is shelf stable for maximum smoothness
*Instead of strawberries, use canned mandarin oranges like worms, or decorate with some fresh flowers (not edible)
*FODMAP Swaps: Start with 1 date per serving and increase as tolerated and portion in other granulated sugar, double the amount of dates used; keep silken tofu servings to under 1 cup and increase as tolerated
