Vegan Butter

Vegan Butter
Makes: 2 1/2 small sticks or one large cube of butter • Total Time: 10 mins • FODMAP rating: medium to high

You can make your own plant-based butter without oil by using a combination of other plant-based fats such as cashews or even sunflower seeds, nutritional yeast, and salt. It is the perfect butter for toast or savory dishes, but is not recommended as a replacement in sweet baked goods. You may also need to double this recipe to more easily mix it in your blender (if you have a large blender). If you use roasted cashews the butter will look more like peanut butter--but it will still taste great!

Ingredients
1 cup raw cashews or sunflower seeds (soaked in water for 4-6 hours, then drained)
1/4 cup water
2 tablespoons nutritional yeast
1 tablespoon lemon juice
1/2 teaspoon salt
Optional: herbs or spices for flavor (such as garlic powder, onion powder, or dried herbs)

Instructions
1.In a high-speed blender, combine the soaked cashews or sunflower seeds, water, nutritional yeast, lemon juice, and salt.
2.Blend until smooth and creamy, scraping down the sides of the bowl as needed to ensure everything is well incorporated.
3.Taste and adjust seasoning as desired, adding more salt or lemon juice if needed.
4.If you'd like to add herbs or spices for flavor, pulse them into the mixture until evenly distributed.
5.Transfer the mixture to a container or mold of your choice (such as a small loaf pan or silicone mold).
6.Refrigerate for at least 1-2 hours, or until firm and spreadable.
7.Once chilled, your homemade plant-based butter is ready to use! Spread it on toast, use it for baking savory treats, or melt it over vegetables or pasta dishes.
