Vegan BLT with Soy Curls

Vegan BLT with Soy Curls
Makes 4-6 servings  Time: 20 minutes FODMAP: low

This sandwich will make you feel like summer! It is eve better with some pickled onions if you have any. This soy curl bacon is surprisingly delicious and has a very similar taste to bacon. This recipe was inspired by Zardy Plants version of soy curl bacon, but I prefer to leave out the oil. 

Ingredients 
soy curl bacon
2 cups soy curls
6 tablespoons soy sauce or tamari
1/4 cup apple cider vinegar
1/4 cup maple syrup (or agave)
Celery Stalks, diced⁠
1/4 cup water or broth
2 teaspoons liquid smoke (preferably mesquite flavor) 
2 tablespoons of your favorite steak or grill seasoning
Pepper to taste⁠
4 teaspoons smoked paprika

Sandwich ingredients
(mayo, lettuce, tomatoes, and any other add ons like pickled onions)

Instructions
1.Mix all of the ingredients (except the soy curls) in a bowl or measuring cup.

2.Add the soy curls to a large skillet and cover with the marinade. Press the soy curls down so they’re coated.

3.Let the soy curls rehydrate for about 10-15 minutes. Because the mixture isn’t hot, they won’t absorb all of it.

4.Then after 10-15 mins turn on the stove top to medium high heat and cook for about 8-12 minutes, stirring every 1-2 minutes to make sure they don’t burn. The liquid will be boiling or simmering and that’s good. It will absorb into the soy curls (and some will evaporate) but the soy curls will also get chewier. If you let them sit too long they can burn, so pay attention to them.

5.Then assemble your BLT and enjoy!
