The Best Vegan Cookies (That Are Also Crazy Cheap & Easy!)

There are SO many amazing vegan cookie recipes out there…
But let’s be real: most of them are pricey. 🤑
Maple syrup, almond flour, tahini, fancy nut butters, coconut sugar… all great—but also expensive.
This version? Uses pantry staples you probably already have.
And instead of regular butter, we’re using a healthier vegan butter—with less of it.
(I love Smart Balance—nearly half the calories and fat of regular butter, and it tastes đź’Ż.)
You can mix up the flour, swap the sugars—these cookies are forgiving and always turn out amazing.
Soft. Chewy. Golden. And completely dairy-free.
Here’s the recipe that changed lives (okay, at least snack time):
🥄 Dry Ingredients:

3 cups white wheat, oat, or spelt flour (wheat pastry flour is also awesome)

1 ½ tsp baking soda

¾ tsp salt

¾ cup white sugar
-
¾ cup brown sugar
-
1 cup vegan chocolate chips (or more—no judgment)
🥄 Wet Ingredients:

¾ cup plant milk
-
¾ cup melted vegan butter (Smart Balance is my go-to)
-
¾ tsp pure vanilla extract
🔥 Instructions:

Preheat oven to 325°F.

Mix dry ingredients in one bowl, wet ingredients in another.

Combine everything to form a dough. Add a splash of milk if too dry.

Scoop, roll, and place on a parchment-lined baking sheet.

Bake for 11–13 minutes.

Let cool for soft, chewy magic.
