Sweet Potato Burgers

Sweet Potato Burgers

Sweet Potato Burgers
Makes: 8 Burgers
Toal time: 40 minutes
FODMAP rating: low 

These delicious burgers are full of flavor, and they freeze well for easy meals. The MapleMustard sauce is highly recommended

Ingredients
3 tablespoons ground flax seed
2 sweet potatoes (or 1 large)
2 cans garbanzo beans or white
beans, drained (or 3 cups, cooked)
1 tablespoon each of cumin, smoked
paprika, garlic powder, onion powder
½ teaspoon chipotle chili powder or
chipotle hot sauce
1 teaspoon salt
½ teaspoon pepper
½ cup rolled oats
½ cup sunflower seeds
2 tablespoons nutritional yeast
(optional)
3 tablespoons ketchup or tomato
paste
½ cup chopped cilantro

Burger Extras:
8 whole wheat hamburger buns
BBQ Sauce, ketchup, mustard, ranch
dressing, etc.
lettuce, tomato, sprouts, cucumber,
pickled veggies

Maple Mustard Sauce:
mix equal parts Dijon mustard (or
your favorite mustard) and maple
syrup

Instructions
1.Preheat oven to 400°F.
2.Bake the sweet potato(es) in the microwave for about 8-10 minutes, until
soft, or in a crock pot or oven for 1-2 hours.
3.Mix the ground flax seed with â…“ cup water in a large bowl. Let sit for 5
minutes. This creates a flax “egg” that helps the burgers bind together and
not be crumbly.
4.Cut the sweet potato open and scoop the baked potato into a measuringcup. Measure 2 cups of potato in the large bowl with the flax seed. Mash
with a fork.
5.Add the beans, and mash until most of the beans are no longer intact, but
they create some texture. You don’t want it smooth puree or your burger
will be more mushy.
6.Add all remaining ingredients and stir well. Taste, and add more spices or
hot sauce to make it spicier, if desired. It should be delicious!
7.Form patties by filling a ½ cup measure and whacking the burger mixture
out of the measuring cup into your hand, then pressing into a burger patty.
Makes 8-9 burgers.
8.Place them on parchment paper or a silicone baking mat on a cookie sheet.
Bake at 400°F for 15 minutes, flip over, then bake about 10 more, until
firm and golden.
9.You can also put them in the air fryer for about 10 minutes, flipping, then
5 minutes more.
10.Serve on buns with lettuce, tomato, your favorite condiments. Sweet and
spicy sauces go really well with this burger, like BBQ sauce, hot sauce, or
maple mustard sauce made by stirring together equal parts mustard and
maple syrup
