Super Easy Lentil Soup (1 Serving, Oil-Free)

This Super Easy Lentil Soup  simple, comforting, and endlessly customizable. Made with pantry staples and whatever veggies you have on hand, it’s a fast, nourishing meal that comes together in minutes.

Ingredients

  • 1 cup cooked lentils (canned or homemade)

  • 1 cup vegetable broth

  • Water, as needed

  • Mixed vegetables of choice (fresh or frozen), any amount

  • Dash of ground coriander

  • Dash of ground cumin

  • Dash of onion powder

  • Dash of garlic powder

  • Juice of 1 lemon

  • Optional: fresh cilantro, chopped

Instructions

  1. Add the broth and a splash of water to a small pot.

  2. Bring to a gentle heat and add the vegetables.

  3. Once the vegetables begin to soften, stir in the lentils.

  4. Add coriander, cumin, onion powder, and garlic powder to taste.

  5. Continue heating until everything is warmed through.

  6. Turn off the heat and stir in the lemon juice.

  7. Top with fresh cilantro if desired and serve warm.
