Snickers Nice Cream

Snickers Nice Cream
Servings: 2  Prep Time: 10 minutes. FODMAP: high

A mix between a Wendy's frosty and a Snickers bar!

Ingredients
1/2 cup soy milk (or other plant milk, but soy is creamiest)
2-3 large dates
2 tbsp peanut butter
1 1/2 Tbsp cocoa powder
2 cups frozen banana chunks
1 tsp vanilla extract (optional)
chopped peanuts for garnish (optional)

Instructions
1.Blend the milk, dates, peanut butter and cocoa together first. Then add the bananas and blend until thick and smooth. This may take a few minutes, and is helpful with a blender plunger. If you don't have a high-speed blender, you may need to use a food processor, or add some more milk for more of a milkshake (also delicious!).
2. Portion into small bowls and serve immediately. Top with crushed peanuts if desired.

FODMAP Swap: Use an alternate plant milk to soy milk; use â…› cup of maple syrup instead of dates, choose bananas that aren’t extremely ripe to minimize higher FODMAPs
