Red Lentil Chocolate Chip Cookies

Red Lentil Chocolate Chip Cookies

Ingredients

  • 1 cup dried red lentils

  • 2 cups water (for softening)

  • ½ cup oats

  • ¼ cup peanut butter powder

  • 4-8 Medjool dates, pitted

  • â…“ cup maple syrup

  • 1 teaspoon vanilla extract

  • ½ teaspoon baking soda

  • 1 cup whole wheat flour

  • ½-1 cup chocolate chips


Instructions

  1. Soften lentils:
    Either soak lentils for 30-60 mins OR boil in 2 cups water for about 5 minutes until softened but not fully cooked. Drain and rinse well in cold water.

  2. Preheat oven:
    Preheat oven to 350°F. Line a baking sheet with parchment paper.

  3. Blend dough:
    Add lentils, oats, peanut butter powder, dates, maple syrup, vanilla, baking soda, and flour to a food processor. Blend until mixture reaches a thick, play-dough consistency.

  4. Add chocolate chips:
    Pulse in chocolate chips just until incorporated.

  5. Shape cookies:
    Scoop onto baking sheet and flatten slightly with your hand or spoon.

  6. Bake:
    Bake for 15 minutes. Let cool before removing from pan.
