Plant-Based Baked Apple Donuts

 

 

Plant-Based Baked Apple Donuts 

Baked, not fried, these donuts are a healthier alternative that doesn’t sacrifice flavor. 
Makes: 12 donuts
Total Time: 30 minutes

Ingredients:
1 ½ cups all-purpose flour (or whole wheat flour)
½ cup coconut sugar (or brown sugar)
1 tsp baking powder
1 tsp baking soda
1 tsp ground cinnamon
¼ tsp ground nutmeg
¼ tsp salt
1 red apple, peeled, cored, and grated
½ cup unsweetened applesauce
¼ cup plant-based milk (almond, oat, or soy)
2 tbsp melted coconut oil or vegan butter
1 tsp vanilla extract
Topping:
¼ cup coconut sugar
1 tsp ground cinnamon

Instructions:
1.Preheat the oven to 350°F (175°C). Lightly grease a donut pan or use a silicone donut mold.

2.Mix dry ingredients: In a large bowl, whisk together the flour, coconut sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.

3.Add wet ingredients: In a separate bowl, combine the grated apple, applesauce, plant-based milk, melted coconut oil, and vanilla extract. Mix well.

4.Combine the wet and dry ingredients, stirring until just combined. Do not overmix.

5.Fill the donut pan: Spoon the batter into the prepared donut pan, filling each mold about ¾ full.

6.Bake for 10-12 minutes or until a toothpick inserted comes out clean and the donuts are lightly golden.

7.Prepare the topping: In a small bowl, mix the coconut sugar and cinnamon.

8.Coat the donuts: Once the donuts are slightly cooled, lightly brush the tops with a little melted coconut oil, then dip them into the cinnamon sugar mixture to coat.

9.Serve and enjoy your plant-based apple donuts warm or at room temperature!

*These donuts pair well with coffee or a warm apple cider. You can also drizzle them with a simple glaze made from powdered sugar and plant-based milk if you want an extra treat!
