Peach Baked Oatmeal Breakfast Bars

Peach Baked Oatmeal Breakfast Bars

Serves: 6   Cook Time: 45 minutes   FODMAP Rating: Low

There are two ways to make this recipe:

Option 1: Follow the directions below for a light and fluffy peach bread casserole.

Option 2: Dump in the entire can of peaches--juices included (I don't even bother to chop the peaches) and skip the sugar and plant milk—or keep the sugar if you like it sweeter. This version transforms into a chewy bar, making it super quick and easy to throw together!

Either way, this recipe is a delicious way to switch up your breakfast and pairs perfectly with a dollop of vanilla yogurt!

Ingredients:

  • 2 cups quick oats
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 large can of peaches (about 15-16 oz), drained and chopped (reserve a little juice if desired)
  • 1 1/2 cups plant milk
  • 1/4 cup applesauce
  • 2 tbsp brown sugar (optional, adjust for sweetness)
  • 1 tsp cinnamon
  • 1/4 tsp salt

 

Instructions:

  • Preheat your oven to 375°F (190°C) and lightly grease a 9x9-inch baking dish or line it with parchment paper.
  • In a large mixing bowl, combine the quick oats, flour, baking powder, sugar, cinnamon, and salt.
  • Stir in the plant milk, and applesauce. Mix until well incorporated.
  • Gently fold in the chopped peaches. If you want a sweeter flavor, add 1–2 tablespoons of the reserved peach juice.
  • Pour the mixture into the prepared baking dish and spread it out evenly.
  • Bake for 35–40 minutes, or until the top is golden and the mixture feels firm to the touch.
  • Allow to cool completely if you want bars, or serve warm for a softer texture.
