Olive Garden Copycat: Vegan Gnocchi Soup

This Olive Garden Copycat Vegan Gnocchi Soup is creamy, cozy, and packed with flavor. Made with hearty veggies, beans or plant-based chick’n, and fluffy gnocchi, it’s the ultimate comfort food you can whip up in just 30 minutes using your Instant Pot. Perfect for family dinners, meal prep, or when you’re craving a dairy-free twist on a classic favorite.

Olive Garden Copycat: Vegan Gnocchi Soup
Total Time: 30 minutes
Servings: 6

Ingredients
1 onion, diced
1 lb carrots, diced
3-4 ribs of celery, diced
3 yellow potatoes, diced
3 cloves of garlic 
1 teaspoon thyme
2 teaspoons of poultry seasoning 
1 teaspoon of dried garlic 
1/4 teaspoon black pepper
3/4 -1 teaspoon salt 
1/4 cup all purpose flour
3 1/2 cups veggie brother
1 package of gnocchi 
1 can of beans or morning star chick'n strips
3 cups unsweetened plant-milk
Nutritional Yeast (as little or as much as you want)
Handful of spincah 
Instructions
1.Water saute onion and garlic in the Instant Pot until translucent. 
2. While the onions are cooking, chop carrots ,potatoes and celery and add to the Instant Pot.
3. Add the seasonings to the pot and stir to combine.
4. Cover everything with the flour, stir and pour veggie brother over the mixture. 
5. Cover with lid and cook mixture for 5 minutes. You may need more time based on size of potatoes.
6. While vegetable mixture is cooking add the gnocchi to your air fryer to cook. 
7. Add plant milk, beans or morning star chick'n strips and fresh thyme to the instant pot after releasing the pressure then add the gnocchi.  Taste and adjust seasonings if needed. 
8. Put Instant Pot on saute and let the soup simmer for a few minutes. Top with nutritional yeast and spinach.
