 Oil-Free Orange Cake 
Serves: 6-8

Cook Time: 30 minutes

This delightful dessert is bursting with fresh orange flavor, offering a moist and fluffy texture without the need for any added oils. Perfect for those following a plant-based diet or anyone looking to enjoy a healthier treat, this cake is easy to make and full of natural sweetness. Whether you're serving it at a family gathering or enjoying a slice with your afternoon tea, this oil-free orange cake is sure to become a favorite. Try this refreshing and wholesome dessert today! 


Ingredients
Wet Ingredients 
zest from 2 oranges 
1/2 cup orange juice
3/4 cup plant-milk
1/4 cup sugar
1/4 cup unsweetened apple sauce 
1 teaspoon vanilla extract

Dry Ingredients
2 cups flour (50 % whole wheat/ 50 % all-purpose flour)
1 tablespoon baking powder
1 tablespoon powdered sugar to sprinkle on top

Instructions
1. Preheat the oven to 340 F. Spray cake pan with cooking spray or parchment paper. 
2. Add wet ingredients to a large mixing bowl and whisk well. 
3. Sift in the flour and baking powder and mix with a hand mixer or whisk for a few seconds. Be sure to not overmix. 
4. Pour the batter into the cake pan and bake for 25-30 minutes at 340 F or until a toothpick comes out dry. Let the cake cool and sprinkle with powdered sugar.
