Ingredients
Wet Ingredients
zest from 2 oranges
1/2 cup orange juice
3/4 cup plant-milk
1/4 cup sugar
1/4 cup unsweetened apple sauce
1 teaspoon vanilla extract
Dry Ingredients
2 cups flour (50 % whole wheat/ 50 % all-purpose flour)
1 tablespoon baking powder
1 tablespoon powdered sugar to sprinkle on top
Instructions
1. Preheat the oven to 340 F. Spray cake pan with cooking spray or parchment paper.
2. Add wet ingredients to a large mixing bowl and whisk well.
3. Sift in the flour and baking powder and mix with a hand mixer or whisk for a few seconds. Be sure to not overmix.
4. Pour the batter into the cake pan and bake for 25-30 minutes at 340 F or until a toothpick comes out dry. Let the cake cool and sprinkle with powdered sugar.
