Oil-Free Curry Hummus

Oil-Free Curry Hummus

Oil-Free Curry Hummus
Serves:8
Prep Time: 10 minutes
FODMAP: high

Enjoy this homemade curry with your favorite chopped veggies or pita bread!

Ingredients
1 can garbanzo beans (or 1 1/2 cups, cooked)
2 cloves garlic, minced
4 tbsp lime juice
1/4 cup tahini
1/4 cup cold water
1-2 tbsp roughly chopped jalapeno
1 date, roughly chopped (you could probably use a touch of sugar or honey instead, but I haven't tried it).
1/2 tsp salt
1 tsp curry powder

Instructions
1.In a food processor, add the lime juice, garlic, water, tahini, jalapeno, and date. Process until smooth, white, and fluffy (about 1 or 2 minutes).
2.Add the garbanzo beans, salt, and curry powder. Process until smooth. Add 1/4 cup more water if you like your hummus a little thinner.
3.Taste and adjust flavors to your preference. Add more jalapeno, salt, or curry powder until flavors are strong to your preference. Garnish with jalapeno or cilantro, if desired.
4.Serve with pita bread, crackers, or fresh vegetables. Keeps well in the fridge for up to a week.

FODMAP Swaps; Sub leeks, green onion tops or chives for garlic or keep garlic <4 tsp a serving or use ¼ tsp per serving or add a little garlic-infused olive oil; Use the sugar or honey suggestion instead of date to lower.
