No-Knead Whole Wheat and Bread Flour Quick Bread

 No-Knead Whole Wheat and Bread Flour Quick Bread
Serves: 6-8
Total Time: 1 hour


Ingredients:
1 cup whole wheat flour
1 cup bread flour
1 tbsp baking powder
1 tsp salt
1 tbsp sugar or maple syrup (optional for a bit of sweetness)
1 ½ cups plant-based milk (or regular milk)
2 tbsp olive oil or melted coconut oil

Instructions:
1. Preheat your oven to 375°F (190°C). Grease a 9x5-inch loaf pan or line it with parchment paper.

2. In a large mixing bowl, combine the whole wheat flour, bread flour, baking powder, salt, and sugar (if using). Stir well to ensure the baking powder is evenly distributed.

3. Pour in the milk and oil. Stir the mixture just until all the dry ingredients are moistened and the batter is smooth. Be careful not to overmix.

4. Transfer the batter into the prepared loaf pan. Smooth out the top with a spatula if needed.

5. Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

6. Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

*This bread will have a more dense, slightly crumbly texture due to the use of baking powder instead of yeast. It’s perfect for a quick loaf when you don’t want to wait for rising times or deal with kneading!
