My Go-To Healthy Vegan Chocolate Cake
Serves: 14-16 • Total Time 45 mins • FODMAP Rating: Medium

With 6 kids and 8 birthdays in the Spring, I had to find a way to make a birthday cake that didn't spike my blood sugar, was vegan, and actually tasted good. This is what came out of many tries and fails. Below is just the cake recipe. My favorite frosting recipe is made with sweet potatoes from Faithful Plateful right here: https://faithfulplateful.com/the-healthiest-chocolate-frosting/ I have also tried THIS ONE with avocados and really liked it too.

Ingredients
2 cups flour (I use white wheat)
2 cups sugar
3/4 cup cacao
2 teaspoons baking powder
1½ teaspoons baking soda
1 teaspoon salt
1 cup milk
1 cup water
2 teaspoons vanilla
One can of chickpeas, rinsed and drained (can sub with other beans if needed)

 

Instructions

1. Mix all the dry ingredients together in a large bowl. 

2. In a blender mix the milk, vanilla, water, and chickpeas until it becomes a smooth paste.

3. Mix the wet ingredients from the blender with the dry ingredients in the bowl until everything is incorporated.

4. Add the mixture to three greased round pans. 

5. Cook in the oven at 350 degrees for about 30 minutes.

6. While cake is cooking, make your frosting. 

7. Once cake is done, let cool, then frost and add your favorite fruit to decorate!
