Lentil & TVP Burger Bowl 

If you cook the TVP with the lentils the Burn sign might come on your instant pot. 

Ingredients

Burger "Meat"
  • 1 yellow onion, chopped
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/8 teaspoon cayenne pepper
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon freshly ground black pepper
  • 1 cup green lentils
  • 1 1/4 cups Broth
  • 1 teaspoon fine sea salt
  • 1/2 cup TVP (rehydrated in 1/2 cup broth)
Special Sauce
  • 1/2 cup cashews (soaked for 1 hour)
  • 1/2 cup water
  • 1 Tablespoon raw apple cider vinegar
  • 2 Tablespoons pure maple syrup
  • 2 Tablespoons tomato paste
  • 2 Tablespoons yellow mustard
  • 1/2 teaspoon onion powder
  • 3/4 teaspoon fine sea salt
For Serving
  • Chopped lettuce
  • Tomatoes, diced
  • Green onions, sliced
  • Pickle slices

Dairy-free shredded cheddar cheese (optional)

Instructions

Make the Burger "Meat" (Instant Pot Method)

  1. Start by soaking cashews
  2. Press Sauté on the Instant Pot and add the chopped onion. Sauté with a splash of water (or broth) until softened, about 5 minutes. Press Cancel to stop the cooking cycle.
  3. Stir in the garlic powder, paprika, cayenne, cumin, and black pepper while the pot is still hot.
  4. Add the green lentils and water, stirring to ensure the lentils are evenly covered. Secure the lid, set the steam release valve to Sealing, and select Manual/Pressure Cook for 5 minutes on high pressure.
  5. Rehydrate the TVP by soaking it in 1/2 cup broth 
  6. Once the cooking cycle is complete, naturally release pressure for 10 minutes, then move the steam release valve to Venting to release any remaining pressure.
  7. Open the lid, stir in salt and rehydrated TVP, and mix well.

Make the Special Sauce

  1. Drain and rinse the soaked cashews.
  2. Blend all sauce ingredients (cashews, water, vinegar, maple syrup, tomato paste, mustard, onion powder, and salt) until smooth.

Assemble the Bowls

  1. Fill a bowl with chopped lettuce, burger "meat," tomatoes, green onions, pickles, and dairy-free cheddar (if using).
  2. Drizzle with plenty of special sauce and serve!

Notes

  • Stovetop Method: Cook lentils in 2 cups water (simmer for 20-30 minutes), then drain. Sauté onion with a splash of water, add seasonings, stir in lentils & TVP, and mix well.
  • Storage: Keep leftovers in separate airtight containers in the fridge for up to 1 week.
