Instructions
Make the Burger "Meat" (Instant Pot Method)
- Start by soaking cashews
- Press Sauté on the Instant Pot and add the chopped onion. Sauté with a splash of water (or broth) until softened, about 5 minutes. Press Cancel to stop the cooking cycle.
- Stir in the garlic powder, paprika, cayenne, cumin, and black pepper while the pot is still hot.
- Add the green lentils and water, stirring to ensure the lentils are evenly covered. Secure the lid, set the steam release valve to Sealing, and select Manual/Pressure Cook for 5 minutes on high pressure.
- Rehydrate the TVP by soaking it in 1/2 cup broth
- Once the cooking cycle is complete, naturally release pressure for 10 minutes, then move the steam release valve to Venting to release any remaining pressure.
- Open the lid, stir in salt and rehydrated TVP, and mix well.
Make the Special Sauce
- Drain and rinse the soaked cashews.
- Blend all sauce ingredients (cashews, water, vinegar, maple syrup, tomato paste, mustard, onion powder, and salt) until smooth.
Assemble the Bowls
- Fill a bowl with chopped lettuce, burger "meat," tomatoes, green onions, pickles, and dairy-free cheddar (if using).
- Drizzle with plenty of special sauce and serve!
Notes
- Stovetop Method: Cook lentils in 2 cups water (simmer for 20-30 minutes), then drain. Sauté onion with a splash of water, add seasonings, stir in lentils & TVP, and mix well.
- Storage: Keep leftovers in separate airtight containers in the fridge for up to 1 week.
