Lentil Tacos with Cabbage Slaw

Ingredients:
- 2 cups dry lentils = ~$1.50
- Taco seasoning (or chili powder, paprika, etc.) = pantry
- 16 corn tortillas = ~$2.50
- ½ head cabbage + 1-2 carrots + vinegar or lime for slaw = ~$2
- Salsa or hot sauce = ~$2
Optional: avocado or guac = ~$2 (or skip to stay under budget)
Lentil & Sweet Potato Tacos with Carrot-Cabbage Slaw
Serves: 4–6

I love lentil tacos on their own, but my kids would love this even more if I added a package of impossible meat to it, and used flour tortillas instead of corn tortillas. Adjust however you need for your family. The coleslaw is simple but yummy, and it is served best with your favorite salsa!
Ingredients
For the Lentil & Sweet Potato Filling:
1 cup dry brown or green lentils
2 cups vegetable broth or water
1 cup cooked sweet potato, cubed (roasted, steamed, or microwaved)
1 packet taco seasoning
Salt to taste (if taco seasoning is low-sodium)
For the Carrot-Cabbage Slaw:
2 cups shredded green cabbage
1 cup shredded carrots (about 2 large carrots)
1 tbsp apple cider vinegar or the juice of two limes
1/2 tsp maple syrup or sugar
1/2 tsp Salt and pepper to taste
Optional: 1 tbsp plant-based yogurt or tahini for creaminess
To Serve:
8–12 small corn tortillas
Optional toppings: avocado slices, chopped cilantro, green onions salsa, hot sauce
Instructions
1.Cook the Lentils:
Rinse lentils and place them in a pot with the broth or water. Bring to a boil, then reduce heat and simmer uncovered for 20–25 minutes, or until lentils are tender and liquid is mostly absorbed.
2.While Lentils Cook – Make the Slaw:
In a mixing bowl, combine shredded cabbage, carrots, vinegar or lime juice, maple syrup/sugar, salt, and pepper. Toss well to coat.
Add the plant-based yogurt or tahini if using, and mix again. Set aside to marinate while you finish the filling.
3. Finish the Lentil Filling:
Once lentils are cooked, stir in the taco seasoning. Mix well and heat through for 2–3 more minutes. Taste and adjust salt if needed. Get the sweet potatoes ready as an extra topping.
4. Warm the Tortillas:
Heat tortillas on a dry skillet or wrap in a clean towel and warm in the oven or microwave.
5. Assemble the Tacos:
Fill each tortilla with a generous scoop of the lentils, then add in sweet potatoes. Top with carrot-cabbage slaw and any additional toppings you like.
