Packed with protein, fiber, and essential minerals, lentils offer a heart-healthy alternative to traditional ground meat, without compromising on flavor. Infused with a blend of veggies, herbs and spices, this plant-based option delivers a vibrant taste experience while being lower in fat and calories.
Ingredients
2 large carrots
1 red onion
1 bell pepper
1 red onion, chopped
3 cloves garlic
1 6 oz can of tomato paste
1 10-14 oz can of tomato sauce
1 1/2 cups of green lentils
2 cups veggie broth
2 tablespoons brown sugar
1-2 teaspoons chili powder
1 teaspoon cumin powder
1/2 teaspoon salt
2 tablespoons Worcestershire sauce or soy sauce
1/2 teaspoon smoked paprika
1 teaspoon liquid smoke (optional)
You will also need buns or rolls (or cooked potatoes)
Instructions
Chop carrots, onion and bell pepper then water sauté everything along with the garlic in your instant pot. Once onions are translucent, add all the other ingredients to the pressure cooker and cook on high pressure for 12 minutes. Serve over rolls, buns or potatoes.
*If not using a pressure cooker, just cook over medium heat until lentils are done. (about 15-20 minutes)
*FODMAP Swaps: Omit the onion and garlic and add another bell pepper or carrot
