Lentil Oat Zucchini Energy Bites

 Lentil Oat Zucchini Energy Bites
Makes: 18 bites

Indulge in these Zucchini Chocolate Oatmeal Bites, a healthy and delicious snack perfect for satisfying your sweet tooth! These bite-sized treats are packed with wholesome oats, zucchini, lentils and rich chocolate, making them a guilt-free option for breakfast, snack time, or even dessert. Whether you’re meal prepping for the week or looking for a quick and nutritious snack, these bites are a great way to enjoy chocolate and veggies in one bite!

Ingredients
1/2 cup zucchini shredded
1 1/4 cups rolled oats
3 tablespoons honey
1/2 cup almond butter
3 tablespoons flax meal
1/4 teaspoon cinnamon
1/4 cup mini chocolate chips dairy free
Roasted Lentils 
1/4 cup dried lentils
pinch of cinnamon
1/2 teaspoon sugar
1 teaspoon coconut oil

Instructions 
1. Cook lentils according to package instructions. Once cooked, preheat oven to 350 degrees and line a cooking sheet with parchment paper. In a medium sized bowl mix the cooked lentils, cinnamon, sugar and coconut oil and stir well. 
2. Roast chickpeas for 20-30 minutes. Keep a close eye on them around the 20 minute mark to see if they will need the whole 30 minutes. Let them cool once cooked.
3. While the lentils are cooling shred the zucchini and add to a bowl. Add the remaining ingredients and stir to combine.
4. Roll the batter into 18 bites and place in the refrigerator for an hour before eating!
