Lemon Mint Rice Pudding

Lemon Mint Rice Pudding
Serves: 6 • Total Time: 20 Minutes • FODMAP rating: low

Rice pudding is a great way to enjoy rice in a sweet way. This lemon mint variety will highlight the benefits of lemon, which can prevent kidney stones and mint, which can relieve indigestion.

Ingredients
1 ¼ cups jasmine rice, uncooked*
2 â…” cups plant-based milk, preferably almond
2 ½ tablespoons maple syrup
2 teaspoons lemon zest
3 mint leaves
1 teaspoon pure vanilla

Instructions
Place rice in a saucepan along with 1 â…” cups milk, maple syrup, lemon zest, and 2 mint leaves.
Let simmer for 10 minutes.
Pour in the remaining milk, mint leaf, and vanilla.
Let simmer for another 8 minutes.
Feel free to add in more milk and serve cold or warm.

*Don’t forget to preload on vegetables before you eat!
*Use leftover rice and mix in the other ingredients and heat up and serve immediately or let it chill and serve cold.
