Lemon Energy Bites

Lemon Energy Bites
Makes: 18 balls • Total Time: 20 minutes • FODMAP Rating: high


Ingredients
1 cup pitted Medjool dates
1 cup cashews
½ cup unsweetened shredded coconut
zest from one lemon
2 tablespoons lemon juice
pinch of salt


Instructions
1.Mix all ingredients together in a food processor and then form into balls.

*Store for up to one week in the fridge or one month (or longer) in the freezer.
*If you aren’t in the mood to roll these into balls, you can press the mixture into a square baking dish lined with parchment paper.
Chill for at least two hours in the fridge or shorter in the freezer, remove the paper, cut into bars, and store.

*Nut-Free: swap out cashews for rolled oats that have been ground into a fine powder
*FODMAP Swaps: Use 1 ½ cups maple syrup with additional oat flour as needed for the right consistency; use sunflower seeds instead of cashews
