Immune-Boosting Breakfast Hash

Immune-Boosting Breakfast Hash
Serves: 1-2 • Total Time: 20 minutes • FODMAP rating: high

Savory breakfast dishes are completely underrated. They are extremely filling and a great way to start the day to get over that morning lull. We guarantee this plate of vegetables for breakfast will make you feel amazing all day!

Ingredients
1-2 bell peppers, chopped
1 onion, chopped
1 zucchini, chopped
1 yellow squash, chopped
1 (8 oz) package of mushrooms, chopped
2 cloves garlic, minced
1 blocks of tempeh
1 handfuls of spinach or other greens
1 to 2 tablespoons no-salt seasoning or steak seasoning
salt and pepper to taste


Instructions
1.Chop up all the vegetables small.
2.Sauté them together in a large skillet, adding a small splash of water if the bottom browns. The vegetables release a lot of water, so no added water should be required. Cook until crisp-tender, about 8-10 minutes. Crumble in tempeh and heat through.
3.Sprinkle on LOTS of seasoning. I use the no-salt seasoning from Costco, but any steak seasoning or Italian seasoning would be good. Add salt and pepper or soy sauce to taste.
4.Save leftovers for a quick meal the next day! So easy (and seriously SO yummy!!) to get your vegetables in this way!
