High Protein Lentil Soup

High Protein Lentil Soup
Serves: 6-8
Total time: 4-8 hours

Ingredients
1 cup dried lentils
3/4 cup quinoa
2 1/2 cups diced carrots
1 box of button mushrooms, diced
1/2 red pepper, diced
1 onion
diced tomatoes 
1 can diced tomatoes 
1-2 ribs of celery
3 cloves minced garlic 
2 teaspoons Italian seasoning 
1 teaspoon smoked paprika
5 cups vegetable broth
1 cup peas
cilantro
micro greens (optional)


Instructions
1. Add dried lentils to a base of a slow cooker after they have been rinsed. Then add the quinoa 
2. Add the diced carrots, mushrooms, red pepper, onion, tomatoes, can of diced tomatoes, celery, minced garlic, Italian seasoning, smoked paprika, vegetable broth.
3. Cook on LOW for 6-8 hours or HIGH for 4-6 hours. Once finished add peas and add salt and pepper to taste and top with cilantro and micro greens if using.
