Hidden Tofu Hash Brown Bake

Serves: 6–8
Prep Time: 10 minutes
Bake Time: 50–60 minutes
Total Time: ~1 hour 10 minutes

A secretly protein-packed, savory breakfast casserole—no one will ever guess there’s tofu in it. My kids love this as a breakfast or a full meal. This is what I like to bring to a potluck brunch instead of the typical egg and sausage or ham casserole. It's so easy to throw together and you can even make it the night before and then cook it in the morning. 

Ingredients

  • 1 (16 oz) bag frozen diced potatoes (hash brown or southern-style) I've also done bigger bags (up to 32 oz!) and it still turns out great! It may need a little bit more salt with bigger bags though.

  • 1–2 bell peppers, chopped

  • 1 onion, chopped

  • 1 cup mushrooms, sliced

  • 1 block firm or extra-firm tofu (drained, not pressed)

  • 1 packet Lipton onion soup mix (or other onion seasoning mix)

  • 1 teaspoon veggie paste + ½ cup water

  • 1 tsp garlic powder

  • 1 tsp Italian seasoning

  • 1 tablespoon soy sauce

  • Salt & black pepper to taste

  • 2 tbsp nutritional yeast

  • Fresh parsley or chives, for garnish, plus more nutritional yeast to sprinkle on top

Instructions

Preheat oven to 375°F (190°C). Lightly grease or line a 9x13 baking dish with parchment paper.

Spread evenly in the dish:

  • Frozen potatoes

  • Chopped bell peppers and onion

  • Sliced mushrooms

In a blender, combine:

  • Tofu

  • Veggie paste + water

  • Lipton onion soup mix

  • Garlic powder

  • Italian seasoning

  • Nutritional yeast (if using)

  • A pinch of salt & pepper

Blend until completely smooth and creamy. Pour the tofu mixture over the veggies in the baking dish. Use a spatula or spoon to gently stir and coat everything evenly.

Cover tightly with foil and bake for 40 minutes. Uncover and bake for another 10–20 minutes, until golden and slightly crispy on top.

Let it cool for 5–10 minutes, then sprinkle with fresh chopped parsley or chives for a pop of color and freshness.
