Chickpea Flour Omelets

Chickpea Flour Omelets
Serves: 4 • Total Time: 15 minutes • FODMAP rating: high

Enjoy a delicious and fluffy chickpea flour omelette that's both dairy-free and egg-free! This plant-based recipe is perfect for a hearty breakfast or a quick and healthy meal. Packed with protein and customizable with your favorite veggies and spices, this vegan omelette is easy to make and absolutely satisfying.

Ingredients
1½ cups chickpea flour
1½ cups water
2 tablespoons flaxseed, ground
½ teaspoon baking soda
½ teaspoon salt
½ teaspoon turmeric
½ teaspoon garlic powder
2 tablespoons nutritional yeast, optional
1 green onion, chopped
½ cup finely chopped vegetables (i.e. mushrooms, red pepper, spinach)
for toppings: avocado, tomato, salsa, ketchup, hummus, or hot sauce

Instructions
Mix all ingredients together, and pour batter with â…“ cup measuring cup onto a hot non-stick skillet.
When bubbles appear on top, flip carefully like a large pancake, and cook 3 to 4 minutes more. Makes 4 omelets about 6 inches in size.


*Don’t forget to preload on vegetables before you eat!
*FODMAP Swaps: Start with ½ cup chickpea flour and mix in all-purpose or oat flour and increase chickpea ratio as tolerated; choose low FODMAP vegetables like summer squash, bell peppers and eggplant
