Easy Vegan Queso
Serves 6  Total Time: 20 minutes   FODMAP Rating: Medium to High 

This Easy Vegan Queso is rich, creamy, and packed with cheesy flavor—without any dairy! Made with cashews, nutritional yeast, and spices, this plant-based dip comes together in just 20 minutes. Perfect for nachos, tacos, or dipping, it’s a must-try for any dairy-free cheese lover. Get the full recipe now!

Ingredients
1 cup raw cashews
3/4-1 cup hot water
1 clove garlic, minced
2 tablespoons nutrtional yeast 
1/2 teaspoon ground cumin
1/2 teaspoon turmeric
1 teaspoon chili powder
1/2 teaspoon salt
1/2 cup salsa

Instructions
1. Prepare cashews: Boil raw cashews with water for 15 minutes or in hot water for 30 minutes or soak overnight.
2. Once cashews are softened, add cashews plus remaining ingredients except the salsa into a blender. It is recommended to start off with ¾ cup water.
3. Blend until creamy, adding more water as needed.
4. Taste and adjust flavor as needed with additional ingredients.
5.Warm in a small saucepan and mix in salsa as it warms up.

*Don’t forget to preload on vegetables before you eat!
*Nut-free swap: try swapping out cashews for ¾ cup cooked potatoes and ¼ cup cooked carrots
*FODMAP swaps: try the nut-free swap or keep the cashews to under 15 nuts and increase as
tolerated; try asafoetida powder instead of garlic or keep garlic to under 1 teaspoon and increase as
tolerated
