Easy Mediterranean Chickpea Salad

Mediterranean Chickpea Salad (Oil-Free)
Serves 1

This easy Mediterranean Chickpea Salad is fresh, flavorful, and made without oil. Using the natural aquafaba from the chickpeas adds moisture and richness without added fat. Perfect as a side dish, light lunch, or meal prep option.

Ingredients

  • 1 (15-oz) can chickpeas, drained but not rinsed
    (reserve a few tablespoons of the liquid from the can)

  • Cherry or grape tomatoes, chopped

  • Mini cucumbers, sliced or chopped

  • Red onion, finely chopped (use as much or as little as you like)

  • ¼–½ teaspoon dried oregano (to taste)

  • ¼ teaspoon onion powder

  • ¼ teaspoon garlic powder

  • Salt, to taste

  • Black pepper, to taste

  • Optional: fresh lemon juice, to taste

Instructions

  1. Open the can of chickpeas and drain off most of the liquid, leaving a few tablespoons behind. Do not rinse the beans.

  2. Add the chickpeas and remaining liquid to a large bowl.

  3. Add the chopped tomatoes, cucumbers, and red onion.

  4. Sprinkle in the oregano, onion powder, garlic powder, salt, and black pepper.

  5. Mix well and taste. Adjust seasonings as needed.

  6. If desired, add a squeeze of fresh lemon juice for brightness.

  7. Serve immediately or refrigerate for later. Flavors improve as it sits.
