Easy & Healthy Vegan Beet Burger

Easy & Healthy Vegan Beet Burger
Makes: 6 patties • Total Time: 20 minutes • FODMAP Rating: high

Say hello to your new favorite vegan meal! These beet burgers are not only visually stunning but also packed with nutrients and flavor. Perfect for anyone looking to add more plant-based meals to their diet. Get the recipe now and enjoy a delicious, healthy burger tonight! 

Ingredients
â…” cup pecans
½ cup oats
1 tablespoon olive oil
½ cup diced onion
2 cup shredded beets
2 cloves garlic, minced
2 tablespoons coconut aminos
1 heaping cup cooked lentils
1 teaspoon dijon mustard
1 teaspoon cumin
½ teaspoon ginger
½ teaspoon red pepper flakes
Salt and pepper to taste

Instructions
In a saucepan add 1 teaspoon of oil and saute the onion and beets until soft.
In a food processor add pecans and oats and pulse until pecans are broken down with some texture remaining. You don't want to make pure flour.
Add lentils, cooked beets and onion, coconut aminos, cumin, mustard, ginger, red pepper flakes and salt and pepper.
Form mixture into 6 small patties.
Add a tablespoon of oil to your pan over medium-low heat. Let it get hot, add burgers and cook for 5-7 minutes per side until cooked.
Serve in a whole wheat bun with lettuce, tomato, and pickle.

*Nut-Free: swap out pecans for sunflower or pumpkin seeds
