Easy Creamy Garlic Marinara Sauce

Creamy Garlic Marinara Sauce

Serves: 4-6 | Total Time: 20 minutes | FODMAP Rating: Medium/High

This simple recipe is a delicious twist on your classic marinara sauce, and the best part? You likely already have everything you need in your pantry! Adjust the amount of garlic or cashews to suit your taste. For added depth of flavor, consider sautéing some diced onions or mushrooms before adding the sauce to the pan. Bonus: this creamy sauce pairs perfectly with gluten-free or whole-grain or high protein pasta for an easy, versatile meal!

Ingredients:

  • 1 jar (24 oz) marinara sauce
  • 3-5 garlic cloves (adjust to taste)
  • 1/2 cup to ¾ cup raw cashews (soaked if not using a high-speed blender)
  • 16 oz of your favorite pasta
  • Salt, to taste
  • Optional: Fresh basil, red pepper flakes, or vegan Parmesan for garnish

Instructions:

  1. Prepare the cashews

    • If you don’t have a high-speed blender, soak the cashews in hot water for 10-15 minutes to soften. Drain before blending.
  2. Cook the pasta

    • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve ½ cup of the pasta water before draining.
  3. Make the creamy marinara sauce

    • In a blender, combine the marinara sauce, garlic cloves, and drained cashews. Blend on high until the mixture is completely smooth and creamy.
  4. Heat the sauce

    • Pour the blended creamy marinara sauce into a large pan over medium heat. Stir occasionally and let it simmer for 3-5 minutes to allow the flavors to meld. If the sauce seems too thick, add a splash of the reserved pasta water to reach your desired consistency.
  5. Combine the pasta and sauce

    • Add the cooked spaghetti to the pan with the sauce. Toss until the noodles are evenly coated.
  6. Serve and garnish

    • Divide the creamy spaghetti among plates and garnish with fresh basil, red pepper flakes, or a sprinkle of vegan Parmesan if desired.
