Easy BBQ Tofu Pizza

This Sweet BBQ Tofu Pizza is a quick and easy lunch or dinner! If you love BBQ sauce you will like this (if you hate BBQ sauce then it might not be your favorite!) Shredded tofu soaks up tangy BBQ sauce, creating the perfect hearty base on a crisp tortilla crust. Juicy tomatoes, sweet corn, and a pop of red onion add fresh flavors, while a final sprinkle of cilantro ties it all together. It’s the ultimate sweet-meets-savory, plant-based pizza that comes together in minutes—no cheese needed!
Ingredients
- 1/3 block of firm or super firm tofu (shredded with a cheese grater)
- 1/3 cup BBQ sauce
- 1 large tortilla
- 1/4–1/2 cup chopped tomatoes
- 1/4–1/2 cup thawed frozen corn
- A few thin slices of red onion
- Fresh cilantro, for topping
Instructions

Preheat & Prep: If desired, pre-toast the tortilla in the oven at 375°F (190°C) for 3–5 minutes or in the air fryer at 400°F for 2 minutes to prevent sogginess to the tortilla from the BBQ sauce.

Make the BBQ Tofu: In a bowl, mix the shredded tofu with BBQ sauce until well coated.

Assemble the Pizza: Spread the BBQ tofu mixture evenly over the tortilla. Sprinkle with chopped tomatoes, corn, and red onion slices.

Cook:
- Air Fryer: Cook at 400°F for about 5 minutes until warmed through and slightly crispy.
- Oven: Bake at 400°F for 8–10 minutes until the tortilla edges are golden and the toppings are heated.

Finish & Serve: Remove from the oven or air fryer, sprinkle with fresh cilantro, and enjoy immediately! Add a sprinkle of extra BBQ sauce if desired
